An easy lobster recipe for impressing. Putting together a lobster dish needn't be a hassle. With a few simple tips and by following this simple herb and almond dressing recipe, you can make a stress-free elegant supper.
Place the almonds in a small bowl and pour over enough boiling water to cover; leave for 20min, then drain.
Step 2
Place all the herbs, garlic and drained almonds in a food processor and process until finely chopped. Add the freshly grated Parmesan cheese and pulse together. With the machine still running, add the olive oil in a thin, steady stream. Season with salt and black pepper and add the lemon juice.
Step 3
Remove the lobster meat from the claws and slice the tail meat. Return to the shells. Cover and place in a steamer or metal colander. Steam over a pan of boiling water for 2min (see tip). Serve warm lobster immediately with the Herb and Almond Dressing and lemon and lime slices. Garnish with fresh herbs.

Prepare ahead: Complete the dressing to the end of step 2, then cover and chill for up to two weeks. To serve. Complete the recipe.
