- 4 passion fruit
- 100 g (3½oz) golden caster sugar
- 50 ml (2fl oz) white rum or Malibu
- Zest and juice of 1 lime
- 125 g (4oz) punnet of cranberries
- 1 pineapple, peeled, cored and sliced lengthways
- 1 papaya, peeled, halved, deseeded and sliced lengthways
- 1 large ripe mango, peeled, halved and cut into slices
- 1 large banana, sliced on the diagonal
- Step 1
Rest a sieve on a small pan, halve the passion fruit and scrape into the sieve. Stir the seeds with a wooden spoon to extract the juice. Discard the seeds.
- Step 2
Put the sugar, rum, lime zest and juice into the pan and heat gently to make a syrup. Add the cranberries and cook on a medium heat for 5min. Allow to cool.
- Step 3
Put the pineapple, papaya, mango and banana in a large bowl. Pour cranberries and syrup over fruit. Leave to marinate at room temperature for at least 30min to let the flavours develop before serving.
