Having a good guacamole recipe up your sleeve is always handy and this versatile chunky avocado dip goes well with a whole range of dishes, but you can't go wrong than serving it with tortilla chips and a fresh squeeze of lime.
We've combined mashed avocado with spring onions, garlic, red chilli, cherry tomatoes, fresh coriander and lime for a zingy and punchy guac. Add plenty of salt and pepper and enjoy in quesadillas, in a burrito, on the side with some mexican-inspired rice, or just scoop onto a tortilla chip.

Step 1
Put 4 roughly chopped spring onions, 1 chopped garlic clove, ½-1 deseeded and chopped red chilli (to taste), a large bunch of fresh coriander, the juice of 1 lime and some seasoning into a food processor, and pulse until finely chopped. Add 75g halved cherry tomatoes and pulse once or twice to break up. Halve 2 very ripe avocados and squeeze the flesh into a large bowl. Add the tomato mixture and mash roughly with a fork to mix. Check the seasoning and serve.
