ripe peaches or nectarines
2 x 125 g (4oz) balls mozzarella
- 90 g
pack Parma ham slices
- 2 Tbsp.
good quality balsamic vinegar or balsamic glaze
- 2 Tbsp.
clear honey
Rock salt and freshly ground black pepper to season
- 1 Tbsp.
chopped fresh chives
- 40 g
(1½oz) roughly chopped skin-on almonds
- Step 1
Halve 3 ripe peaches or nectarines (if you're using peaches, you may want to peel them first). Remove and discard stones. Cut each half into three wedges.
- Step 2
Divide among six plates: the fruit wedges, 2 x 125g (4oz) balls mozzarella, torn into bite-sized pieces, and a 90g pack Parma ham slices.
- Step 3
Drizzle over 2tbsp good quality balsamic vinegar or balsamic glaze and 2tbsp clear honey. Season with rock salt and freshly ground black pepper. Scatter over 1tbsp chopped fresh chives and 40g (1½oz) roughly chopped skin-on almonds. Serve immediately.
