A potato salad is a great addition to any buffet or picnic, or served wonderfully alongside a griddled piece of meat and green salad on a spring or summer's day. This recipe has a light and fresh tasting dressing, of lemon, mustard, cornichons and parsley, however you can use whatever flavour combinations you like best!
For best tasting Jersey Royals, make sure to buy them in season, which is between March and July.

Ingredients
1
(2lb 2oz) Jersey Royal or new potatoes, cut into bite-sized pieces
2Tbsp.
extra virgin olive oil
Finely grated zest and juice of 1 lemon
40g
(1½oz) cornichons, sliced
½ tsp Dijon mustard
1
shallot, finely chopped
Large handful curly parsley, roughly chopped
Directions
Step 1
Bring a large pan of water to the boil and cook the potatoes for about 20min or until just tender. Drain and leave to steam dry in the colander for 3min.
Step 2
Meanwhile, mix remaining ingredients in a large serving bowl with some seasoning. Toss through warm potatoes and check seasoning. Serve warm or at room temperature.
Get Ahead
Complete recipe up to a day ahead but don't add parsley. Cover and chill. To serve, allow salad to come up to room temperature, then toss through the parsley.
