Add some extra flavour to your classic mash recipe by using seasonal vegetables – we've teamed up leek and parsnips to create a delicious taste of Autumn.
Put leeks, parsnips and garlic in a pan of salted cold water, bring to the boil, then simmer for 15–20min. Drain, return to pan and dry off over a low heat for 3–4min. Heat milk and put in a food processor with leeks, parsnips, chopped parsley, 5 level tbsp Parmesan and plenty of black pepper. Whiz until just smooth. Put into an ovenproof dish. Sprinkle with remaining Parmesan, garnish and serve with sausages and marmalade.
