2 medium cooked dressed crabs, each with about 225 g (8oz) crab meat (see tip)

Salt and ground black pepper

(1⁄2oz) grated Parmesan cheese

(2 level tbsp) ground almonds

Directions
Step 1
Finely chop spring onions. Mix with the next four ingredients, 60ml (4 level tbsp) breadcrumbs, the crab meat and egg yolks. Add cayenne pepper and season well.
Step 2
Whisk egg whites until they form soft peaks; fold into the crab mixture. Spoon into the crab shells; place in an ovenproof dish.
Step 3
Mix remaining breadcrumbs with cheese and almonds; sprinkle over crab. Melt butter; drizzle over. Cook at 220°C (200°C fan) mark 7 for 30min or until hot to centre. Serve.
