- 1 large ripe mango
- 1 small Charentais melon
- 1 orange
- 1 garlic clove
- 3 Tbsp. white wine vinegar
- 1 Tbsp. ginger marmalade
- 4 Tbsp. extra virgin olive oil
- Flat-leafed parsley
- Salt and freshly ground black pepper to season
- Sliced smoked meat to serve, youll need around 300 g (11oz) for six people
- Step 1
This salsa works well as an accompaniment for both smoked duck and chicken. Peel and slice 1 large ripe mango and 1 small Charentais melon and put into a bowl.
- Step 2
Finely grate the zest of 1 orange and crush 1 garlic clove. Add both to the bowl with juice of ½ the orange, 3tbsp white wine vinegar, 1tbsp ginger marmalade, 4tbsp extra virgin olive oil and a little freshly chopped flat-leafed parsley.
- Step 3
Season with salt and freshly ground black pepper, mix gently, then cover and chill for at least 2hr.
