- Step 1
First, preheat the oven to 190°C (170°C fan) mark 5.
- Step 2
Grease and baseline two 18cm (7in) sandwich tins.
- Step 3
Put the butter into a bowl and melt in the microwave on High for 30sec.
- Step 4
Put the eggs and sugar into the bowl of a freestanding mixer and whisk until pale and creamy.
- Step 5
Lift the whisk - the mixture should be thick enough to leave a trail.
- Step 6
Fold half the flour into the mixture.
- Step 7
Mix coffee into the butter and pour half around edge of mixture. Add remaining flour, then the rest of the coffee and butter. Gradually fold in.
- Step 8
Divide mixture between tins and bake for 25min until risen, firm to the touch and shrinking away from sides.
- Step 9
Upturn on to wire racks and cool.
- Step 10
Mix together the filling ingredients and use to sandwich the cake together. Dust with icing sugar.
