Ingredients
1 long cinnamon stick, broken in half
5 cardamom pods, lightly crushed
1/2 tsp vanilla extract
75g (3oz) caster sugar
350ml gin
Directions
Step 1
Put the cinnamon, cardamom, vanilla and sugar in a large kilner jar or sealable container. Pour over the gin.
Step 2
Store in a cool dark place for at least a week, or up to two weeks, gently swirling the jar every couple of days to help dissolve the sugar.
Step 3
Strain the gin (see GH Tip) into a jug, through a sieve lined with muslin. Pour strained gin into a bottle (you can use a funnel to help). The gin will keep for up to 6 months.
Serve neat over ice, or with sparkling apple juice.
