Ingredients
- 2
large tomatoes
- 1/2
red onion
Small bunch fresh coriander
- 2 Tbsp.
olive oil
Juice 1/2 lime
- 1
garlic clove
Tabasco sauce, or 1 chilli, deseeded and finely chopped
Directions
- Step 1Score a shallow cross in bottom of tomatoes. Put tomatoes in a bowl and pour over boiling water. Leave for 20sec. Remove from boiling water and plunge into cold water briefly to cool slightly. The skin should then peel away easily using fingers.
- Step 2Cut tomatoes in half lengthways, then use a spoon to scoop out and discard seeds. Dice tomato into small cubes.
- Step 3Peel and finely chop onion.
- Step 4Roughly chop coriander by tearing off stalks, bunching leaves together and cutting through the pile of herbs. Repeat a couple of times
- Step 5Put tomatoes, onion and coriander in a bowl. Add olive oil, lime juice, crushed garlic and seasoning, then stir everything together. Leave salsa at room temperature for 30min, to allow flavours to mature.
