Soaking your potatoes before cooking helps to remove excess starch, meaning they cook more evenly and go extra crispy. Tossing with a little cornflour helps ramp up the crunchy vibes, too. These fries are best eaten straight from the air fryer while they’re still nice and hot. Serve with tomato ketchup, mayonnaise or barbecue sauce for dipping.

Ingredients

sweet potatoes, roughly 250g each
1Tbsp.
vegetable oil
1Tbsp.
cornflour
Flaked sea salt, to sprinkle
Directions
Step 1Peel the sweet potatoes and cut into finger-sized strips. Put into a bowl of cold water and leave to soak for 10min.
Step 2Drain the sweet potatoes and pat dry with kitchen towel. Put into a dry bowl and add in the oil, cornflour and plenty of seasoning. Toss to coat.
Step 3Preheat air fryer to 180°C. Arrange the fries in the basket in a single layer. Cook for 35min, turning halfway through, until crispy. Sprinkle over a little flaked sea salt to serve.
TIPs For a spicy twist, sprinkle over a pinch of cayenne pepper before cooking.
For cheesy chips, sprinkle over some grated mozzarella and return to the air fryer for 5min at 180°C, until the cheese has melted.
