Ingredients
For the rice pudding
150g
condensed milk
1Tbsp.
vanilla bean paste
500ml
milk
2
x 250g pouches microwave basmati rice
For th eraspberry coulis
200g
raspberries
2Tbsp.
icing sugar
Directions
Step 1For the rice pudding, in a large pan, mix the condensed milk, vanilla and milk. Add the rice, breaking up any
clumps. Put over medium-high heat and cook, stirring
regularly, for 15min, or until the rice is tender and most
of the liquid has been absorbed.
Step 2Meanwhile, make the raspberry coulis. Whizz the
raspberries and icing sugar in a blender until smooth. Pass
through a fine sieve, working the pulp well (discard seeds).
Step 3Divide the rice pudding between 6 bowls and serve with
the coulis to drizzle over.
GH TIP
To cook in the microwave, mix the rice pudding ingredients in a microwave-safe bowl. Cook on 900W for about 15min, stirring every 5min.
