Ingredients
450g
raw peeled king prawns
2
garlic cloves, crushed
1
chopped and deseeded red chilli
2
spring onions, roughly chopped
1tsp.
finely grated fresh root ginger
1
medium egg
2Tbsp.
cornflour
75g
sesame seeds (we used a mixture of black and white)
Sweet chilli sauce, to dip
Directions
Step 1In a food processor, whizz prawns, garlic, chilli, spring onions, ginger and plenty of seasoning to a chunky paste. Add in egg and cornflour and whizz to combine. Transfer mixture to a bowl, cover and chill for 30min to firm up.
Step 2Empty sesame seeds into a small bowl. Shape prawn mixture into 20 balls (a scant tbsp each), then roll in the sesame seeds. Arrange on a baking tray lined with baking parchment, cover and chill for 30min (up to 24hr) to firm up.
Step 3Preheat oven to 200°C (180°C fan) mark 6. Bake the balls for 15min, until cooked through and piping hot. Serve with cocktail sticks and some sweet chilli sauce for dipping.
