cherry tomatoes
2Tbsp.
olive oil
1Tbsp.
balsamic vinegar

slices white farmhouse bread
Large handful finely chopped coriander, parsley and basil

Directions
Step 1Preheat oven to 200°C (180°C fan) mark 6. Halve the cherry tomatoes and mix in a roasting tin with 1tbsp olive oil, balsamic vinegar and some seasoning. Arrange cut-side up and cook for 30min. Cool.
Step 2Meanwhile, for the crostini, line a large baking tray with baking parchment. Using a 4cm cutter, cut out 36 circles from the slices of bread and arrange on the lined tray. Brush with 1tbsp olive oil and cook for 10min, turning halfway. Cool completely.
Step 3For the herby cream cheese, in a medium bowl mix herbs with cream cheese and some seasoning. Pipe or spread on to the crostini, then top each with a tomato.
GET AHEAD Cook tomatoes and crostini and make herby cream cheese up to 3 days ahead. Cover tomatoes and herby cream cheese separately and chill. Store crostini in an airtight container at room temperature. Complete recipe to serve.
