pistachio kernels, plus 16 extra to decorate
150g
ground almonds
Finely grated zest 1 lemon
150g
icing sugar, sifted, plus 50g extra to dust

Directions
Step 1Preheat oven to 170°C (150°C fan) mark 3. Line 2 baking sheets with baking parchment. Whizz the pistachios in a food processor until finely ground (don’t over-whizz or the nuts will release their oil). Empty into a large bowl and mix in the ground almonds, lemon zest and 75g icing sugar.
Step 2In a separate medium bowl, beat the egg whites until they hold stiff peaks. Gradually beat in the remaining 75g icing sugar, beating until thick and glossy. Using a large metal spoon, fold the egg whites into the pistachio mixture until just combined.
Step 3Sift the extra 50g icing sugar to dust into a shallow bowl. Roll heaped tsp portions of the dough into balls (you should have 16), then roll in the icing sugar to coat. Arrange on the lined baking sheets, spacing apart.
Step 4Press 1 pistachio into the top of each. Bake for 20min, or until pale golden and slightly puffed. Transfer to a wire rack and leave to cool completely. Serve.
TO STORE Once cool, keep in an airtight container at room temperature for up to 5 days.
