150g
ripe figs, quartered
1/2Tbsp.
olive oil
1/2Tbsp.
runny honey
11/2Tbsp.
balsamic vinegar
3
thyme sprigs, leaves picked

small ciabatta loaf (about 120g), or 2 ciabatta rolls
100g
mascarpone

handfuls rocket
Directions
Step 1Preheat oven to 200°C (180°C fan) mark 6. In a small roasting tin, toss the figs, oil, honey, balsamic vinegar, thyme and plenty of seasoning. Roast for 20min, or until the figs have softened.
Step 2Halve the ciabatta loaf to make 2 thinner rectangles, then halve each slice to make a total of 4 shorter rectangles. Alternatively, if using rolls, simply cut in half horizontally. Arrange on a baking tray, cut-side up. Add to the oven for the final 5min of fig cooking time, or until toasted.
Step 3Meanwhile, in a small bowl using a spatula, beat the mascarpone and plenty of seasoning until smooth and slightly loosened.
Step 4Arrange the ciabatta on 2 plates. Spread over the seasoned mascarpone, then top with the rocket. Spoon on the figs, then drizzle over any juices in the tin. Serve.
