Ingredients

kg small new potatoes, we used Charlotte
6
smoked streaky bacon rashers
2
ripe avocados, peeled, destoned and roughly chopped
Juice 1/2 lemon
3Tbsp.
mayonnaise
2Tbsp.
natural yoghurt
5
spring onions, sliced
75g
blue cheese, crumbled or chopped
Directions
Step 1Bring a large pan of salted water to the boil and cook the potatoes
for 12-15min, or until tender. Drain
thoroughly and leave to cool.
Step 2Meanwhile, fry the bacon in a dry
frying pan over medium heat for 5-6min, or until crisp. Set aside to cool.
Step 3In a small bowl, toss the avocado
with lemon juice and some seasoning.
Step 4In a large bowl, mix the mayonnaise,
yogurt, a pinch of salt and plenty of
freshly ground black pepper. Halve
the cooled potatoes and add to the
mayonnaise bowl with the spring
onions. Toss to coat and check
the seasoning.
Step 5Tip the potato salad on to a large
platter, pile the avocado and blue
cheese on top and crumble over
the bacon. Serve.
