Step 1Trim the broccoli and cut any thick stalks in 1/2 lengthways. Put into a large frying pan (that has a lid) over medium heat, pour in 150ml just-boiled water, cover with the lid and steam for 10- 12min until water has mostly evaporated and broccoli is just tender.
Step 2Meanwhile, whisk the dressing ingredients together in a small bowl.
Step 3Uncover frying pan and remove broccoli to a plate with tongs. Add oil, garlic and chilli to the pan and fry for 2-3min until aromatic. Remove 1/2 the aromatics to a small bowl or plate, then return broccoli to the pan with the dressing. Cook for 2min to warm through, tossing gently to coat.
Step 4Transfer broccoli to a warm serving dish, sprinkle over the reserved garlic and chilli; serve.
GET AHEAD Complete step 1 up to a day ahead. Transfer broccoli to a bowl of iced water to stop the cooking, then drain; cool, cover and chill. Complete recipe to serve.
