Ingredients
125g
mixed colour baby tomatoes, halved
100g
mixed olives, pitted
1-2 garlic cloves, finely chopped
2tsp.
fresh thyme leaves
4Tbsp.
extra virgin olive oil
Crispbreads, bread sticks, or pitta chips, to serve
FOR THE WHIPPED FETA
250g
good-quality feta, crumbled, we used Odysea

small garlic clove, crushed
1Tbsp.
extra virgin olive oil

Directions
Step 1In a bowl combine the tomatoes, olives, garlic (to taste), thyme, oil, and some freshly ground black pepper. Stir well, cover and chill overnight.
Step 2For the whipped feta, put the feta, garlic and oil in a small processor with 1/2 the yogurt and whizz until smooth, scraping down the sides a couple of times. Scrape into a serving bowl, mix in remaining yogurt, close-cover and chill until needed.
Step 3To serve, spoon tomatoes and olives on top of the feta and drizzle with a little of the marinating oil. Serve with crispbreads, bread sticks or pitta chips for dipping.
