Step 1Cook the chorizo in a large, deep frying pan over medium heat for
5min, stirring occasionally, or until
the edges are beginning to crisp and
some of the oil has been released.
Step 2Meanwhile, heat the olive oil in a separate large frying pan over
medium-high heat for a couple of min.
Crack in the eggs and sprinkle over
the sesame seeds and chilli flakes.
Cook for 5min, or until the whites are
beginning to crisp around the edges.
Step 3Meanwhile stir the chickpeas,
spinach and some seasoning into
the chorizo pan and cook until
piping hot. Check seasoning.
Step 4Divide the spinach mixture between
4 plates or shallow bowls and top with
the fried eggs and any crispy chilli
and sesame seeds in the pan. Serve.
