Ingredients
75g
caster sugar
150g
unsalted butter, chilled and cubed
200g
plain flour, plus extra to dust
Finely grated zest 1 lemon

Earl Grey tea bag
Directions
1 In a food processor, pulse the caster sugar, butter, flour, lemon zest and a pinch of fine salt until beginning to clump together. Rip open the Earl Grey tea bag and add contents to the processor. Pulse to combine into a dough.
2 Tip on to a lightly floured work surface and roll out to 5mm thick. Using a small, sharp knife, cut out some tea bag shapes (or stamp out circles using a round or fluted cutter). Transfer to baking sheets lined with baking parchment, spacing slightly apart. Chill for 30min, to firm up.
3 Preheat oven to 180°C (160°C fan) mark 4. Bake the biscuits for 15-18min, or until light golden around the edges. Leave to cool on the sheets for 3min, then transfer to a wire rack to cool completely.
