Ingredients

large ripe mangos, peeled, destoned and cut into rough chunks (about 300g)
400g
coconut yogurt alternative, we used The Coconut Collaborative
1tsp.
vanilla bean paste
2Tbsp.
icing sugar
finely grated zest and juice 2 limes
You will also need
6 lolly sticks
Directions
Step 1Pulse the mango in a food processor to a chunky purée. In a large bowl mix the coconut yogurt alternative, vanilla, icing sugar, lime zest and juice.
Step 2Layer alternate spoonfuls of the purée and yogurt alternative mixture into 6 x 100ml lolly moulds, tapping the mixture down to remove air bubbles. Insert lolly sticks as directed and freeze until solid, ideally overnight. Remove from moulds and serve.
To Store: Keep the frozen popsicles in the freezer for up to 1 month.
