Ingredients
1kg asparagus, woody ends trimmed
125ml
extra-virgin olive oil, plus 1tbsp to drizzle
1tsp.
sesame seeds
4Tbsp.
balsamic vinegar
21/2Tbsp.
maple syrup
2tsp.
Dijon mustard
1/4
red onion, thinly sliced
Directions
Step 1Preheat oven to 220ºC (200ºC fan) mark 7. Put asparagus in a roasting tray, drizzle over 1tbsp olive oil, season and toss to coat. Roast for 10-12min, until tender, adding the sesame seeds for the final 2min.
Step 2Meanwhile, make the dressing. Whisk the vinegar, maple syrup, mustard and some seasoning in a bowl. Gradually whisk in the olive oil, until combined.
Step 3Tip asparagus into a serving bowl or dish and scatter over the onion. Drizzle over the dressing and serve.
GET AHEAD: Make dressing up to 2 days ahead; cover and chill. To serve, allow to come to room temperature, whisk to recombine and complete recipe.
