A great way to start the day. These bars are full of nuts and seeds so are a great way of boosting your intake of iron, zinc, magnesium and fibre. Buckwheat adds extra protein and magnesium.
50g (2oz) dark chocolate (at least 70%), melted (optional)
Directions
Step 1
Preheat oven to 190°C (170°C fan) mark 5. Line a 23cm (9in) square tin with baking parchment.
Step 2
In a large bowl, mash the bananas and mix in the eggs, tahini, vanilla and maple syrup until well combined. Add the remaining ingredients and stir to coat everything well. Transfer this mixture to the lined baking tin and press to an even thickness.
Step 3
Bake for 25-30min until golden and turning crispy. Score into 10 bars while the bake is still warm, then allow to cool completely in the tin.
Step 4
Once cool, cut into bars and drizzle with the melted chocolate, if you like.
