Pour the tomato sauce and chopped tomatoes into a pan, set over a low heat while you prepare the chicken. Preheat grill to medium-high.
Step 2
Put chicken breasts on a board, cover with clingfilm and bash with a rolling pin until 1cm thick. Put the flour and some seasoning into a shallow bowl. In another bowl, mix the breadcrumbs with the Parmesan. In a third bowl, beat the eggs. Coat each chicken breast in flour, tap off excess, dip into the egg, then coat in breadcrumb mixture.
Step 3
Heat oil in a large frying pan and fry chicken for 3min on each side, or until golden and cooked through (you may need to do this in batches).
Step 4
Pour the hot tomato sauce into an ovenproof dish, arrange the chicken on top of the sauce, top each chicken breast with mozzarella slices, then grill for 5min until golden and bubbling.
