This savoury bread and butter pudding recipe is rich, cheesy and packed full of comforting umami flavour. Serve with some steamed seasonal veggies, or a crisp green salad, for a hands-off supper. If you aren't a fan of Marmite, we have a tip for making it without, see below.

Ingredients

slices of stale bread
40g
butter, softened
Marmite, to taste
10
slices mature Cheddar
50g
cooked ham slices
4
large eggs
600ml
milk
1Tbsp.
finely chopped chives
Directions
Step 1
Preheat the oven to 180°C (160°C fan) mark 4. Spread 4 slices of the bread with the butter and Marmite, to taste. Top each slice with two mature Cheddar slices, the cooked ham slices and another piece of bread. Cut the sandwiches into quarters to make triangles and arrange in a 2.6litre ovenproof dish.
Step 2
In a jug, whisk together the eggs, milk, chives and some seasoning. Pour the mixture into the dish and gently press down bread (some may stick up above the liquid). Leave to soak for 15min.
Step 3
Rip up the 2 remaining mature Cheddar slices and dot over the pudding. Cook for about 40min or until golden and set. Serve with salad, if you like.
