You can prep this cocktail in advance - just add your ice and soda water just before serving to retain its bubbles.

Ingredients
200g
caster sugar

mint leaves

limes, quartered
50ml
white rum
ice and soda water
Directions
Step 1
In a small pan gently heat the sugar with 200ml water, stirring until the sugar has dissolved. Bring to the boil and cook for 1min. Stir in 10 mint leaves and leave to cool.
Step 2
When cool, put 3 tbsp of this mint sugar syrup, 2 lime quarters and 5 mint leaves into each of 6 glasses. Mash contents with the end of a rolling pin and mix in rum, plenty of ice and soda water to taste.
