A fool is traditionally pureed fruit, gently folded through delicious custard. Sometimes with the addition of an oaty crumble, broken biscuits, salted caramel or chocolate drizzle, but our recipe uses fresh in season plums and fragrant cardamom for a hint of spice.

Ingredients

plums, stoned and sliced
125g
caster sugar
4
cardamom pods, split, seeds removed and crushed
2Tbsp.
lemon juice
150g
carton fresh custard
400g
Greek yoghurt
Directions
Step 1
Put plums, caster sugar, cardamom seeds and lemon juice in a pan. Cover and bring to the boil. Simmer for 20–25min or until plums are soft but still holding their shape. Pour into a cold bowl and leave for 30min.
Step 2
Remove eight slices for decoration and set aside. Strain plums, reserving juices. Purée in a processor and pour into a bowl.
Step 3
Boil juices for 3–4min until reduced to 3tbsp, then stir into plum purée with the custard and one tub of yogurt until smooth. Spoon into four tumblers and chill for up to 2hr. Decorate with yogurt and plum slices and serve with amaretti biscuits.
