ground cumin
4 garlic cloves, crushed

small red onion, finely chopped
Large bunch coriander, finely chopped

red chilli, finely chopped
Juice of 2 limes
- 200 ml
(7 fl oz (⅓ pint)) olive oil

(2lb 5oz) flat iron, flank or rump steak, trimmed
- Step 1
Place all the ingredients except the steak into a large mixing bowl. Add seasoning and mix well. Spoon half the mixture into a small serving jug or bowl and set aside to serve with the meat once it is cooked.
- Step 2
Place steak in the remaining mixture and toss well to coat. Cover and set in the fridge to marinate for at least an hour, or overnight if possible.
- Step 3
Heat a griddle pan or barbecue to high. Remove steak from the marinade and discard the liquid. Pat dry, season and sear for 2min on each side for rare, 2½min on each side for medium or 3min on each side for well done. Rest the meat on a serving board for 10min before slicing thickly. Serve with the salsa.

Timings for cooking steak vary depending on the thickness of your meat, but ask your butcher to cut steaks 2½cm (1in) thick if you can. Buy flat iron, flank or rump for good marbling of fat and the best flavour.
