Ingredients
1Tbsp.
vegetable oil
red onion, finely sliced
200g
mangetout, sliced lengthways
2
red or orange peppers, finely sliced
1/2tsp.
-1 tsp chilli flakes
2 x 250 g packs microwavable rice
300g
cooked and peeled king prawns
227g
can pineapple, cut into chunks
3Tbsp.
light soy sauce
1/2tsp.
fish sauce
large handful fresh coriander, to garnish
lime wedges, to serve
Directions
Step 1
Heat the vegetable oil in a large frying pan or wok over medium heat and fry onion for 8min until softened. Add mangetout and peppers and fry for another 6min, until nearly cooked through.
Step 2
Stir in chilli flakes, rice, prawns, pineapple, soy sauce and fish sauce and heat through. Garnish with coriander and serve with lime wedges.
