- 2 mangoes
- 250 ml carton of thick full-fat Greek-style yogurt
- Grated rind and juice of one orange
- A pinch of garam masala and salt and freshly ground black pepper
- 1 large red chilli
- A small handful of roughly chopped fresh mint
- Step 1
Peel and dice two mangoes. In a food processor or blender, whiz about a quarter of the diced mango with a 250ml carton of thick full-fat Greek-style yogurt, the grated rind and juice of one orange, a pinch of garam masala and salt and freshly ground black pepper.
- Step 2
Add one large red chilli, deseeded and finely shredded, whiz for 5sec, then add a small handful of roughly chopped fresh mint and whiz again for 2–3sec – just until the mint is blended through the yogurt but is still in fairly large pieces. Spoon the relish into a serving bowl and stir through the remaining mango. Cover and chill until ready to serve, but use within 2hr.
