- 3 Tbsp. lemon juice
- 8 Tbsp. olive oil
- 3 level tbsp chopped fresh mint
- 250 g pack halloumi, sliced into 8
- 1 level tbsp flour, seasoned
- 2 Tbsp. oil
- 200 g bag mixed leaf salad
- 2 avocados, peeled and sliced
- Flat-leafed parsley to garnish
- Step 1
To make the dressing, whisk the lemon juice together with the olive oil and mint, then season with salt and freshly ground black pepper.
- Step 2
Coat the halloumi with the flour. Heat the oil in a large frying pan and fry the cheese for 1min on each side or until it forms a golden crust.
- Step 3
Meanwhile, in a large bowl, add half the dressing to the salad leaves and avocado and toss together. Arrange the hot cheese on top and drizzle over the remaining dressing. Garnish and serve.
