Step 1
Preheat the grill on High. Cut 1 skinless chicken breast horizontally down its length, but without quite cutting it in two, then open it up and spread out flat. Grill for 8-10min.
Step 2
Meanwhile, put 50g (2oz) low-fat cream cheese into a bowl and stir in 1tsp Dijon mustard. Season with ground black pepper. Remove chicken from grill and spread the cheese and mustard mix over the top. Grill for a further 5min or until the meat is cooked and the topping is golden.
Step 3
Serve with a salad made from green leaves, chopped tomatoes, sliced radishes, chopped cucumber and green beans, drizzled with ½tbsp low-fat dressing
