This Spanish inspired slow cooker chicken recipe is packed full of flavour and uses chorizo, red peppers and peas.
You'll need to cook the chicken for 10 minutes before adding into the slow cooker, plus soften the onions and cook the red peppers before adding those to the slow cooker bowl also.
A little bit of prep, but it will be worth it - serve with a garnishing of parsley and crusty bread.
Add the turmeric to the hot stock and leave to infuse for at least 5min. Meanwhile, heat the oil in a large frying pan over a medium heat. Add the chicken and fry for 10min or until golden, then transfer to a slow cooker (don't turn the cooker on at this point).
Step 2
Add the onion to the pan and cook over a medium heat for 5min or until soft. Add the red pepper and chorizo and cook for a further 5min, then add the garlic and cook for 1min.
Step 3
Add the rice and stir well. Pour in the stock and peas and season, then carefully add the mixture to the chicken in the slow cooker and stir together. Cover and cook on Low for 1-2hr until the rice is tender and the chicken is cooked through.
Step 4
Check the seasoning and garnish with the parsley. Serve with some crusty bread.
