Ingredients
150g
couscous
vegetable stock
large handful of deseeded and finely chopped cucumber
small handful each of freshly chopped mint and coriander
a few finely sliced spring onions
110g
pomegranate seeds
salt and pepper, to season
1Tbsp.
extra virgin olive oil
Directions
Step 1
Put couscous in a bowl and pour over boiling water or piping hot vegetable stock to just cover. Cover bowl with clingfilm or a plate and set aside for 10min.
Step 2
Break up couscous with a fork, then mix in a large handful of deseeded and finely chopped cucumber, a small handful each of freshly chopped mint and coriander, a few finely sliced spring onions, a 110g pack pomegranate seeds, some seasoning and 1tbsp extra virgin olive oil (if you like).
