Heat the oil in a large pan over medium heat and fry the onion for 10min, until softened. Add the garlic and fry for 1min. Add the beef mince and fry, stirring to help break up the mince, for about 8min or until well browned.
Step 2
Add smoked paprika, ground coriander, tomato purée and plenty of seasoning. Fry for 1min before adding rice, sweetcorn and a splash of water. Heat through and check seasoning.
Step 3
Meanwhile warm the tortillas according to packet instructions.

To serve, spread a large spoonful of the refried beans, if using, on to a warmed tortilla before topping with the mince mixture, some guacamole, sour cream and grated cheese. Roll up and enjoy!
