- 1 Tbsp. olive oil
- 1 large onion, finely chopped
- ½ large red chilli, deseeded and thinly sliced
- 450 g (1lb) minced beef or lamb
- 125 g (4oz) smoked bacon lardons
- 3 roasted red peppers, drained and finely chopped
- 400 g can chopped tomatoes
- 125 ml (4fl oz) red wine
- 300 g (11oz) spaghetti
- 25 g (1oz) freshly grated Cheddar or Gruyère cheese
- 2 Tbsp. freshly chopped flat-leaf parsley (optional)
- Step 1
Heat oil in a large pan over a medium heat. Add onion and chilli and fry for 5-10min until soft and golden. Add beef and lardons and stir over the heat for 5-7min until well browned.
- Step 2
Stir in the red pepper, tomatoes and red wine. Season, bring to the boil, then simmer over a low heat for 15-20min.
- Step 3
Meanwhile, cook pasta according to packet instructions. Drain.
- Step 4
Just before serving, stir the grated cheese, parsley if using and the sauce into the spaghetti.
