Skinless chicken breasts, cut into bite-sized chunks

Step 1
Put the oil in a blender and add the parsley, garlic, paprika, cumin, lemon zest and juice. Whiz to make a paste.
Step 2
Put the chicken in a medium-sized shallow dish and add the spice paste, then rub in and leave to marinate for at least 20min. Preheat the grill to high.
Step 3
Thread the marinated chicken onto skewers and grill the chicken for 10-12min, turning every now and then, until the meat is cooked through.
Step 4
Serve with: 50g (2oz) brown rice per person, cooked according to packet instructions along with this salad: Mix a 400g can drained chickpeas, a thinly sliced red onion, 4 roughly chopped tomatoes and 4tbsp chopped parsley in a bowl with 1tsp olive oil. Serve with a lemon wedge.
