carrot, roughly chopped

unsmoked streaky bacon, chopped
- 1 Tbsp.
plain flour
- 500 ml
hot chicken stock
- 100 ml
crème fraîche
- 400 g
cooked chicken breast, cut into chunks
- 2
x 410 g tins cannellini beans
- 100 g
frozen peas
- 200 g
chorizo, de-skinned and cubed
large handful parsley, chopped
- Step 1
Heat oil in a pan and gently fry the onion, carrot and bacon for 10min.
- Step 2
Stir in the flour and cook for 1min. Slowly stir in the stock and crème fraîche and simmer for 5min, stirring frequently.
- Step 3
Stir in the chicken, beans and peas and heat through gently until piping hot.
- Step 4
Meanwhile, fry the chorizo over a medium heat in a separate pan until it turns golden and releases some of its oil. Remove the chorizo with a slotted spoon and strain the oil into a jug.
- Step 5
Stir three-quarters of the chorizo into the stew and check the seasoning. Serve garnished with parsley and the remaining chorizo, drizzled with the chorizo oil.
