This crunchy roasted broccoli recipe is incredibly easy to make and can be on your table in under 30 minutes.
We've combined broccoli, garlic, fresh chilli and a splash of balsamic vinegar and roasted until just cooked through but retains a lovely crispy texture.
2 medium broccoli heads, about 600g, trimmed and cut into medium florets

clove garlic, finely chopped
½-1 red chilli, deseeded and finely chopped

Step 1
Preheat oven to 200°C (180°C fan) mark 6. In a large roasting tin, toss the broccoli, oil, garlic and chilli together with lots of seasoning.
Step 2
Roast for 12-15min until just beginning to soften (it should still have a crunch). Drizzle over the vinegar, toss gently to coat, then serve immediately.
