These Asian-inspired tofu parcels are perfect for time-short weeknights. Baked with soy sauce, garlic and ginger, and topped with fresh coriander, chilli and lime juice, this recipe is delicious as is or served over steamed pak choi and fluffy rice.

Ingredients
150g
regular tofu
over ½ a thinly sliced garlic clove
2
cm fresh root ginger cut into matchsticks
1tsp.
soy sauce
Small handful of fresh coriander
A few chilli rings
lime wedges
Directions
Step 1
Preheat oven to 220°C (200°C fan) mark 7. Stack two 30.5cm sheets of greaseproof paper, baking parchment or foil on top of each other and place tofu on one side.
Step 2
Sprinkle over the thinly sliced garlic clove, ginger, soy sauce and freshly ground black pepper.
Step 3
Fold paper/parchment/foil over, then fold in edges to seal. Put parcel on a baking sheet and cook for 15min.
Step 4
Open and sprinkle over fresh coriander and sliced chilli. Serve with lime wedges.
Get ahead
Assemble parcel and put on a tray up to 3hr ahead. Chill. Complete recipe to serve.
