Ingredients
400g
pasta, we used farfalle
2Tbsp.
wholegrain mustard
Juice 2 lemons, plus wedges to serve
140g
bag rocket
200g
peppered smoked mackerel fillets, skinned and flaked

Directions
Step 1In a large pan of boiling water cook the pasta according to pack instructions, about 10-12min.
Step 2Meanwhile, in a large bowl mix the mustard, lemon juice and olive oil. Drain pasta, reserving 50ml of the cooking water. Whisk reserved water into the dressing bowl.
Step 3Stir the pasta and rocket into the dressing bowl, until everything is coated and the rocket has started to wilt. Gently mix through the flaked mackerel, check seasoning and serve with extra lemon wedges.
