slices white or brown bread, crusts removed
75g
butter, softened
50g
mature cheddar, finely grated
1tsp.
Dijon mustard

Wooden skewers or cocktail sticks
Directions
Step 1Preheat oven to 220°C (200°C fan) mark 7. Using a rolling pin, roll each slice of bread to flatten completely.
Step 2In a medium bowl, mix 1⁄2 the butter with the Cheddar, mustard and plenty of seasoning. Spread evenly over the flattened bread slices. Cut each slice in 1⁄2 lengthways.
Step 3Tightly roll up each rectangle from a long edge. Lay 4 rolls side by side and secure through the ends with skewers or cocktail sticks (to prevent them from unravelling during cooking). Arrange on a baking tray.
Step 4Melt the remaining butter and brush over the bread rolls. Cook in the oven for 10-15min, turning halfway, or until crisp and golden brown. Serve hot, warm or at room temperature.
