If you wash butternut squash there’s no need to peel before roasting, the skins soften and caramelise during cooking. This simple side is delicious served hot, warm or at room temperature.
If you want to cook your butternut wedges outside, cook them on the BBQ instead, turning regularly, until charred and tender.

Ingredients

medium butternut squash (about 1kg), trimmed, halved and deseeded
60g
butter, softened
1
red chilli, deseeded and finely chopped
Small handful coriander leaves, finely chopped
Finely grated zest 1 lime
50g
feta, crumbled (optional)
Directions
Step 1Preheat oven to 200°C (180°C fan) mark 6. Cut each butternut half into 1/3s lengthways and put into a roasting tin. In a small bowl mash the butter, chilli, coriander, lime zest and plenty of seasoning. Rub 1tbsp of the butter mixture over the wedges (using your fingers is easiest). Set remaining butter aside at room temperature. Roast squash for 30-40min, until tender.
Step 2Transfer to a serving dish, dot over the remaining butter and turn the wedges gently in it so it melts. Sprinkle over the feta (if using) and serve.
Get ahead:
Prepare to end of step 1 a few hr ahead; cool, cover and keep at room temperature. To serve, dot over remaining butter and return to a hot oven to melt. Complete recipe.
