- Step 1Line a 20.5cm round springform tin with baking parchment. Whizz the biscuits in a food processor until finely crushed. Add in the 1tbsp cream cheese, and whizz again, until combined.
- Step 2Empty into the prepared tin and press firmly to level with the back of a spoon. Chill until needed.
- Step 3Reserve 175g of the cherry filling for the topping. Wipe the food processor clean, then add the remaining cherry filling and the 1kg cream cheese. Whizz until fairly smooth and combined. Spoon into the tin, on top of the base, and smooth to level. Chill for at least 4hr (up to 48hr), until set.
- Step 4To serve, transfer to a cake stand or board and spoon over the reserved cherry filling. Serve in slices.

Get ahead: Prepare to end of step 3 up to 2 days ahead. Cover and chill. Complete recipe to serve.
Not a fan of Oreos? Substitute with any biscuit you like! Bourbons and custard creams would be great here.
Don't like cherries? Try with tinned pear or peaches instead for a different flavour.
