Ingredients
For the strawberry purée
500g
strawberries, hulled and roughly chopped
50g
caster sugar
25g
strawberry jam, optional, see intro
For the milkshake
600ml
semi-skimmed milk, chilled
500ml
vanilla ice cream
2tsp.
vanilla bean paste
To serve, optional
Aerosol cream
Sugar sprinkles
Directions
Step 1For the strawberry purée, in a medium pan gently heat the strawberries, sugar and 100ml water, stirring until the sugar dissolves. Increase the heat and simmer for 15-20min, crushing the strawberries with a wooden spoon, or until broken down and jammy.
Step 2Stir in the strawberry jam, if using (see intro). Remove from the heat and empty into a large blender. Whizz until smooth and leave to cool completely (in the blender).
Step 3For the milkshake, add the milk, ice cream and vanilla bean paste to the blender and whizz until thick and smooth.
Step 4 Empty into 8 rough 300ml glasses. To serve, top aerosol cream and sprinkles, if you like.
