This refreshing ginger mojito has the perfect combination of flavours and makes a great cocktail to celebrate with for the Coronation, or at a picnic with friends.
Cooling mint is combined with fiery ginger to produce a light and refreshing twist on a classic cocktail. If you're trying to cut down on alcohol, simply leave out the rum for a delicious mocktail alternative.
Make the ginger simple syrup ahead of time and use it in other cocktails (like an old fashioned if you like whisky) or try adding it to a sponge cake to add extra flavour and keep it moist.

Ingredients
75g
caster sugar
40g
fresh root ginger, peeled and finely chopped, plus extra slices to serve
1
lime, roughly chopped, plus 135-150ml lime juice (about 7-8 limes)
50g
mint, leaves picked, plus extra sprigs to garnish
200ml
white rum
ice, to serve
soda water, chilled, to serve
Directions
Step 1In a small pan, gently heat the sugar and 75ml water, stirring until the sugar dissolves. Increase the heat and bring to the boil. Bubble for 1min, then remove from the heat. Add the ginger and leave to cool and infuse for at least 1hr (up to 24hr).
Step 2Pour the ginger sugar syrup (including the ginger) into a large jug and add the chopped lime and mint leaves. Muddle/mash thoroughly with the end of a rolling pin, then stir in the lime juice and rum.
Step 3Fill 8 tall glasses with ice and strain in the mojito mixture equally between them. Top up with soda water. Garnish with mint sprigs and ginger slices and serve.
