Ingredients

limes, finely sliced

large mint sprigs, leaves picked, plus extra sprigs to garnish
10
cm piece of cucumber
150ml
elderflower cordial, we used Belvoir
11/2l
soda water
ice, to serve
Directions
Step 1Put the lime slices and mint leaves into a large jug. Using a y-shaped vegetable peeler, shave the cucumber into ribbons (discard the seedy core). Add to the jug and pour in the elderflower cordial and soda water. Gently stir to combine and add some ice to chill.
Step 2Fill 10 tall glasses with ice and pour in the mocktail. Garnish with the mint sprigs and serve.
