Step 1Slice out and discard the core from the cabbage. Thinly shred the leaves. Melt the butter in a large, deep frying pan (that has a lid) over medium heat. Stir in the chilli and garlic and cook for 1min, until fragrant.
Step 2Turn up heat to medium-high and add the cabbage. Cook, stirring occasionally, for 2min, until the cabbage is charring slightly. Lower heat, cover, and cook for 20min, stirring occasionally, until the cabbage is tender.
Step 3In a small bowl, whisk the sugar, vinegar and plenty of seasoning. Toss through the cabbage mixture. Empty into a warm serving dish and serve.

Prepare the cabbage up to a day ahead. Put into a bowl and cover with a damp tea towel. Chill. Complete recipe to serve.
